Most vehicle jack points are under the vehicle, either under the diffs or control arms if IFS, if you need to change a tyre in the bush you should always try to find level ground, if the ground is soft then you will need to place a sturdy fotting under the jack, marine ply is perfect for this, about 10-12mm thick and 300mm x 300mm square should be enough. Other options are air bags (bull bags), just don't let them touch anything hot or sharp.

Don't stress too much mate. You might like to consider buying a 4 tonne Hydraulic Bottle jack. They are not very expensive. And as Crooza says, a jacking plate, but you can improvise with a few good strong sticks etc. You will always be able to jack your car up, it's just how dirty you get. I don't carry a High Lift Jack, just a stock jack and a 300mm square jacking plate.

I use a small trolley jack at home but a bottle jack on the road. I generally go directly beside the wheels using the suspension areas to lift the wheel.
