Do they have some sort of leveling system, or do you have to park on flat ground, coz that's nearly always impossible.
Apologies if this is a dumb question.

No self leveling, just find a good spot. Same as any other tent or caravan.
Teza.
I was thinking that at least with a caravan or camper trailer you can level them with the stabiliser legs and jockey wheel.

I've had that too, but I wasn't in a roof top tent.
I saw the car rocking side to side through the corner of my eye, and was about to rev it up to someone, and then saw a wombat under the car, surprised me that a animal of that size could move around a nearly 3 tonne vehicle.

I have no back seats and draws in the back, and a false floor to meet up with the draws. My fridge is flat in the foot well and about 700mm for a bed next to it, with a cut down cargo barrier that has a dvd player on it. Blacked out rear windows and a towel on the cargo barrier and window socks stops the light getting in.

That sounds like a good idea and as Billolga said, try it and see how it goes. You can modify as you try it.

I carry a plastic leveling ramp, its goes up to about 150mm got it from camec. still you need to be selective where you camp. dont forget theres usually rocks around you can park up on too.
